EXECUTIVE CHEF / IL CAPO

Chef Paulie O'Connor

For more than 30 years, award-winning chef and restaurateur, Paulie O’Connor, has injected a level of quality and skill into his craft that is second to none. His love for food and feeding people ensures each and every customer he serves will experience a meal unlike any other.

O’Connor opened his first restaurant, the Old Yellowstone Garage (or OYG, as hungry locals would call it) in Jackson Hole, WY, in the early 2000s; he relocated OYG to Alpine, WY, several years later and the locals were more than happy to make the drive. He later took over operations at the Million Dollar Cowboy Steakhouse, where he elevated the classic steakhouse menu to include real world Italian cuisine paired with expertly-trimmed and perfectly cooked steaks.

His reputation in Jackson Hole as a top-level chef and restaurateur remains in the community still today.
